Nutritious Pickled Beets

Instructions:

  1. Prepare the Beets:
    • Scrub the beets and trim the tops to 1 inch.
    • Place them in a Dutch oven and cover with water.
    • Bring to a boil, then reduce heat and simmer, covered, for 25 to 30 minutes, or until tender.
    • Remove from water and let cool. Peel and slice the beets, then place them in a bowl.
  2. Prepare the Pickling Mixture:
    • In a small saucepan, combine vinegar, sugar, cloves, spices, and salt.
    • Bring to a boil, stirring occasionally, for about 5 minutes.
    • Pour the hot mixture over the sliced beets.

  1. Refrigerate and Serve:
    • Refrigerate for at least one hour.
    • Drain before serving.
