Instructions:
- Prepare the Beets:
- Scrub the beets and trim the tops to 1 inch.
- Place them in a Dutch oven and cover with water.
- Bring to a boil, then reduce heat and simmer, covered, for 25 to 30 minutes, or until tender.
- Remove from water and let cool. Peel and slice the beets, then place them in a bowl.
- Prepare the Pickling Mixture:
- In a small saucepan, combine vinegar, sugar, cloves, spices, and salt.
- Bring to a boil, stirring occasionally, for about 5 minutes.
- Pour the hot mixture over the sliced beets.
- Refrigerate and Serve:
- Refrigerate for at least one hour.
- Drain before serving.
